Vegetable Salad and Dressings


Salad

Ingredients

green bell pepper - 1/3 cup chopped
red bell pepper - 1/3 cup chopped
chopped red onion - 1/2 cup
celery - 1/2 cup chopped
tomatoes - 2 sliced
cucumber/any squash - 1 cup
lettuce - 3-4 leaves chopped
roast bread cubes - 1 cup
carrot - 1/2 cup sliced
Jalapenos - 1 sliced
Cheese - grated (optional)

Steps

Mix all the ingredients in a large bowl. Sprinkle salt and fresh ground pepper and cumin. Drizzle a little olive oil on top. Top with grated cheese.



Dressing

1. French Dressing

Ingredients

olive oil - 3/4 cup
lemon juice - 1/4 cup
sugar - i tbsp
salt - 3/4 tsp
paprika - 1/4 tsp
dry mustard - 1/4 tsp
pepper - 1/4 tsp
garlic - 1 clove crushed

Steps

Put all ingredients in a bowl and blend well with a mixer. Or else you can use a bottle with a screw-top lid and shake vigorously to blend well. Chill dressing for atleast 6 hours and remove garlic before serving.

2. Sour cream dressing

Ingredients

mayonnaise - 1/2 cup
sour cream - 1/2 cup
white vinegar - 1 tsp
garlic powder - 1/2 tsp
ground black pepper - 1/2 tsp
onion - 1/2 tsp finely minced
milk - 1tbsp

Steps
Whisk all ingredients together and adjust seasonings.

3. Honey mustard dressing

Ingredients

vinegar - 3tbsp
honey - 3tbsp
mayonnaise - 1/3 cup
mustard paste - 1tbsp
onion - 1 tbsp finely minced
coriander leaves - 1 1/2 tbsp minced
olive oil - 3/4 cup
salt

Steps

Heat vinegar and honey in a heavy small saucepan over low heat, stirring until honey blends well with vinegar. Pour into bowl and allow it to cool. Now add mayonnaise, mustard, onion, parsley and salt and whisk well. Now gradually whisk in the oil till you get a smooth consistent dressing.


Serving ideas

The salad and dressing need not be eaten out of a bowl. They can be eaten as a burrito or as cut rolls/wraps along with sauteed vegetables.
