Mushroom-GreenOnion Biryani


Ingredients

Basmati rice - 2 cups
Mushrooms - 1 pack
Green onion - 2-3 bunches
Green chillies - 3
ginger-garlic paste - 1 tbsp
Black Cumin - 1 tsp
Mint leaves - 2-3 tbsp (finely chopped)
Coconut powder - 2 tbsp
Yoghurt - 1/2 cup
Turmeric - 1 tsp
Chilli powder - 1/2 tsp
Coriander powder - 1 tsp
Amchur powder - 1 tsp
Lemon juice - 1 tbsp
bay leaves - 2
Cloves - 4-5
Cardamom - 1-2
Cashew nuts - 10
Salt
Oil

Steps

1. Clean the mushrooms well and quarter them. Roughly chop the green onions.


2. Heat oil in a thick bottomed pot. Add the whole garam masala and cashews and fry for a minute on low to release the flavour. Now add the black cumin seeds and once they start spluttering add the mushrooms and chopped green onion. Now add to this the chopped mint and coriander leaves and fry for a couple of minutes. Add ginger-garlic paste, salt and all the powders. To this add the yoghurt and mix well.


3. Add the rice and mix well. Add 3 cups of water and cook it on medium heat. Squeeze some lemon and serve hot with any raita.





Tips

You can cook the masala in a pan and then add it to the rice and cook in a rice cooker.
