Strawberry Crepes



Ingredients

Butter/Ghee - 1 tbsp
Eggs - 4
Milk - 1 cup
All purpose flour - 1 cup
Sugar - 2-3 tbsp
Strawberry sauce * - 1 cup
Strawberries
Salt
Honey/Maple syrup
Whipping cream


Steps

* For the strawberry sauce

Blend together a few strawberries, a couple of slices of orange and some sugar or honey. You can use lime juice instead of orange slices. Strain it if you like a very smooth texture.

For the crepes

1. Separate the egg whites and yolks. Beat them separately.
2. Whisk in the salt, sugar, milk, 3 tbsp of strawberry sauce and flour into the yolks. Lastly fold in the whisked egg whites.
3. Whisk the batter so that small lumps are present.
4. Heat a pan and apply some butter to it. Pour some batter with a laddle and cook on medium till it becomes golden brown. Flip and cook for a minute. Keep aside to cool.



Serving ideas

Quarter the crepes and serve them like pancakes along with maple syrup or strawberry sauce.


Or you could apply the sauce on one side of the crepe and roll it up. Serve with sliced strawberries, whipped cream and honey.

You can also bake pancakes with this batter. Butter two 9 inch pie dishes, pour the batter equally in them and bake at 425 F for 15 min or until golden brown. Because this batter is runny, the best way to make pancakes is to bake.

Tips

For good texture of the crepes, do not over-whisk the batter. Let there be tiny lumps. Also, whisk the egg whites well separately and then mix into the batter.

Do not put the fruit into or on the batter while cooking unless you like mushy and soggy fruit.

Do not stack the crepes/pancakes while they are still hot. It makes them soggy.
